A nostalgic, simple pumpkin dessert made with just pumpkin puree, yellow cake mix, and butter. It features a moist, pudding-like bottom and a crumbly, golden top, offering comfort food satisfaction with minimal effort.

Ingredients

Scale
  • 15.25 oz box yellow cake mix
  • 15 oz can 100% pure pumpkin puree
  • 1/2 cup (1 stick) unsalted butter, softened
  • 12 tsp pumpkin pie spice
  • 1 tsp pure vanilla extract
  • Optional: Vanilla ice cream, whipped cream, or chopped pecans/walnuts for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the pumpkin puree, vanilla extract, and pumpkin pie spice until smooth.
  3. Pour the pumpkin mixture into a 9×13 inch baking dish and spread evenly.
  4. Sprinkle the entire box of dry yellow cake mix evenly over the pumpkin layer.
  5. Cut the softened butter into small cubes or thin slices and dot them evenly across the entire surface of the cake mix.
  6. Bake for 45-55 minutes until the top is golden brown and edges are bubbling.
  7. Let cool for at least 15 minutes before serving to allow layers to set.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Ensure butter is softened for even distribution. Do not skip the cooling step to prevent the cake from falling apart when sliced. If the top browns too quickly, tent with foil for the last 10 minutes.
