  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon brown sugar (12g), packed
  • 1 tablespoon all-purpose flour (8g)
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • Pinch of salt
  • 1 teaspoon lemon juice (about ¼ lemon)
  • ¼ cup old-fashioned rolled oats (20g)
  • ¼ cup all-purpose flour (30g)
  • 3 tablespoons brown sugar (36g), packed
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter (42g), cold and cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the apples and cut them in half through the stem, then each half into quarters. Remove the core and seeds, then slice each quarter crosswise into ¼-inch thick pieces. You should have about 2 cups of sliced apples.
  3. In a medium bowl, combine the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until every apple slice is coated. Let sit while you make the topping.
  4. For the topping, if browning the butter: In a small skillet over medium heat, melt 1 tablespoon of the butter. Cook, swirling occasionally, until golden brown and smells like toasted nuts (about 3-4 minutes). Pour into a small bowl and let cool slightly. Cut the remaining 2 tablespoons of cold butter into small cubes and add to the browned butter. Refrigerate for 5 minutes to firm up. If skipping this step, use all 3 tablespoons of cold butter cut into cubes.
  5. In a small bowl, combine oats, flour, brown sugar, cinnamon, and salt. Stir with a fork. Add the butter cubes and use your fingertips or a pastry cutter to work the butter into the dry ingredients until crumbly with some pea-sized butter pieces visible.
  6. Divide the apple filling evenly between two 8-ounce ramekins. Sprinkle the topping over each, pressing lightly. Place ramekins on a small baking sheet.
  7. Bake for 25-30 minutes, until the topping is golden brown and the filling is bubbling around the edges. If topping browns too quickly, tent loosely with foil for the last 5-10 minutes.
  8. Let cool on a wire rack for at least 10 minutes before serving.

Notes

Don’t skip the resting time after baking—it allows the filling to set. Use a mix of apple varieties for best flavor. For extra crunch, toast the oats before adding to the topping. The topping can be made ahead and refrigerated for up to 3 days.
