These spooky witch’s finger cookies are a Halloween tradition that kids absolutely love. Made with a tender almond shortbread dough and topped with almond fingernails, they’re creepy without being too scary and taste amazing.

  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ cup (56g) almond flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • About 24 whole almonds (blanched or natural, not roasted and salted)
  • Red food coloring gel
  • Green food coloring gel (optional)
  • Seedless raspberry jam (about 2 tablespoons)

Instructions

  1. Cream the butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl halfway through.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and almond extract until fully combined, about 1 minute. The mixture might look slightly curdled—that’s normal.
  3. Mix the dry ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and baking powder.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed. Stop as soon as the dough comes together—do not overmix. The dough should be soft but not sticky. If too sticky, add an extra tablespoon of flour.
  5. Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes (up to 24 hours).
  6. Preheat and prep: When ready to bake, preheat oven to 325°F (163°C). Line baking sheets with parchment paper or silicone mats.
  7. Shape the fingers: Take about 1 tablespoon (20g) of dough and roll into a log about 3 inches long and ½ inch thick. Gently taper one end to look like a fingertip. Place on prepared baking sheet, spacing about 2 inches apart.
  8. Create the knuckles: Using the back of a butter knife or small offset spatula, gently press 2-3 lines across each finger to create knuckle indentations. Don’t press too hard.
  9. Add the fingernails: Dip the flat end of a whole almond into a tiny bit of seedless raspberry jam and press gently onto the tapered end of the finger.
  10. Add the cuticle detail: Using a toothpick or knife tip, dab a tiny dot of red food coloring gel at the base of each almond nail.
  11. Bake: Bake for 12-15 minutes, until lightly golden on the bottom and just barely set on top. Do not overbake.
  12. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, chill the shaped cookies on the baking sheet for 10-15 minutes before baking to help them hold their shape. The almond extract is essential for the authentic marzipan flavor. Cookies taste even better the next day as the almond flavor deepens. For a shiny, witchy sheen, brush baked cookies with corn syrup mixed with green food coloring.
