A giant, gooey chocolate chip cookie baked in a cast iron skillet, perfect for sharing on game day. With crispy edges and a soft, almost underbaked center, this one-pan wonder is a crowd-pleaser.

  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • Flaky sea salt for sprinkling (optional)
  • 1/2 cup chopped nuts (walnuts or pecans, optional)
  • 1/2 cup chocolate chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. While it’s heating, place your cast iron skillet inside to warm up for about 5 minutes.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed for 2-3 minutes until light, fluffy, and pale in color. Scrape down the sides of the bowl halfway through.
  3. Crack the eggs into a small bowl, then add them one at a time to the butter mixture, beating well after each addition. Add the vanilla extract and beat for another 30 seconds until smooth and slightly glossy.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. With the mixer on low speed, gradually add the flour mixture to the butter mixture. Mix just until the flour disappears, about 30 seconds. Do not overmix.
  6. Switch to a rubber spatula and gently fold in the chocolate chips until evenly distributed.
  7. Carefully remove the warm skillet from the oven (use oven mitts). Transfer the dough into the skillet and press it into an even layer using a spatula or lightly floured hands. Press a handful of extra chocolate chips into the top of the dough.
  8. Bake for 20-25 minutes. Start checking at 20 minutes. The edges should be golden brown and set, while the center still looks slightly underdone and puffy. A toothpick inserted near the center should come out with moist crumbs attached.
  9. Remove the skillet from the oven and place it on a cooling rack. Let the cookie cool in the skillet for at least 10-15 minutes before serving. Sprinkle with flaky sea salt if desired.

Notes

For the best texture, use a mix of chocolate chips. Don’t overbake; the center should look slightly underdone when you pull it out. Let the cookie rest for at least 10 minutes before serving to allow it to set. If adding nuts, toast them first for extra flavor.
