Instructions

  1. Clean the seeds: Separate seeds from pumpkin pulp, rinse under cold water, and remove any remaining pulp. You should have about 1 ½ cups.
  2. Boil the seeds: In a medium saucepan, bring 4 cups water and 1 tablespoon salt to a boil. Add seeds and boil for exactly 10 minutes. Drain.
  3. Dry the seeds: Spread boiled seeds on a clean kitchen towel or paper towels and pat dry. Let sit for 5 minutes.
  4. Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  5. Make the coating: In a medium bowl, whisk together melted butter, sugar, cinnamon, vanilla (if using), and ¼ teaspoon salt until a thick paste forms.
