  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (260g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • About 30 pieces candy corn (for ears)
  • About 30 chocolate chips (for eyes)
  • Black frosting or melted chocolate (for whiskers and details)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Beat in egg and vanilla extract until fully incorporated, about 1 minute.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Dough should be soft but not sticky.
  6. On a lightly floured surface, roll dough to about ¼-inch (6mm) thickness.
  7. Dip cat-shaped cookie cutter in flour and cut out shapes. Place cookies about 2 inches apart on prepared baking sheets.
  8. Gently press two candy corn pieces into each cookie for ears, pointed side up, angled outward, pressing about halfway in.
  9. Bake for 8-10 minutes, until edges are set and tops look slightly cracked. Rotate pans halfway through.
  10. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Once completely cool, press chocolate chips into place for eyes. Use a piping bag with black frosting or melted chocolate to draw whiskers, nose, and other details.

Notes

For best results, use room temperature butter and egg. If dough gets too warm while rolling, chill for 10 minutes. Candy corn can melt if pressed too deep; press about halfway. Take cookies out when edges are set and centers are soft—they continue baking on the hot sheet. Store in an airtight container at room temperature for up to 5 days. Freeze undecorated cookies for up to 3 months.
