  • 8 ounces sharp cheddar, sliced into thin wedges
  • 6 ounces goat cheese log (soft, spreadable variety)
  • 4 ounces aged gouda, cubed
  • 2 medium Honeycrisp apples, sliced thin (tossed with lemon juice)
  • 1 large Bosc pear, sliced
  • 1 cup seedless red grapes, washed and in small clusters
  • 1/2 cup dried figs, halved
  • 1/2 cup dried cranberries (unsweetened preferred)
  • 1/3 cup Marcona almonds (or lightly salted roasted almonds)
  • 1/3 cup candied pecans
  • 1/4 cup pumpkin seeds, toasted
  • 3 ounces prosciutto, torn into ribbons (optional)
  • Small jar of honey (for drizzling)
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 1 box good-quality crackers (e.g., Raincoast Crisps or water crackers)
  • Fresh rosemary sprigs for garnish (optional)
  • Flaky sea salt for finishing

Instructions

  1. Let brie and goat cheese come to room temperature (about 20 minutes before assembling).
  2. Place a large wooden board or slate platter on a clean work surface.
  3. Position the brie wheel at the center-left of the board. Place the goat cheese log at the center-right, slightly offset. Arrange cheddar wedges and gouda cubes around them, creating a visual triangle with space between cheeses.
  4. Slice apples and pears right before adding to prevent browning. Fan apple slices near the cheddar, arrange pear slices near the goat cheese. Add small grape clusters in gaps. Scatter dried figs and cranberries around the edges.
  5. Tuck prosciutto ribbons near the brie. Place almonds, candied pecans, and pumpkin seeds in small bowls or in little piles directly on the board.
  6. Arrange baguette slices and crackers around the edges of the board, overlapping slightly.
  7. Drizzle a little honey over the brie and goat cheese. Sprinkle flaky sea salt over the entire board. Garnish with fresh rosemary sprigs if desired.
  8. Serve immediately, ideally within an hour of assembly.

Don’t overthink the arrangement—natural-looking boards are best. Temperature matters: serve cheeses at room temperature for best texture. Slice apples and pears at the last minute to prevent browning; toss with lemon juice if prepping ahead. Use what you have—this board is flexible. For a vegan version, use cashew-based cheese and maple syrup instead of honey. For gluten-free, use gluten-free crackers and skip the baguette.
