  • 1 small wheel (about 8 ounces) double or triple cream Brie
  • 4 ounces sharp white cheddar
  • 3–4 ounces blue cheese (gorgonzola or stilton)
  • 1 (4-ounce) log goat cheese
  • 1 cup red grapes, washed and separated into small clusters
  • 1/2 cup dried cranberries
  • 4–6 fresh figs, quartered
  • 1/3 cup good quality honey
  • 1/3 cup fig jam or apricot preserves
  • 1/2 cup candied walnuts or pecans
  • 6–8 ounces mixed crackers (water crackers, rosemary olive oil, seedy whole wheat)
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • Handful of thin crunchy breadsticks
  • 4–5 sprigs fresh rosemary
  • Few sprigs fresh thyme
  • 1/4 cup pomegranate seeds
  • 1/2 cup mixed green and kalamata olives
  • 1/3 cup cornichons or pickled vegetables

Instructions

  1. Start with the Bowls (5 minutes): Place small bowls or ramekins on the board in a triangle pattern. Fill one with fig jam, one with honey, and one with olives. If using pickled vegetables, put them in a fourth bowl.
  2. Add the Cheeses (5 minutes): Place cheeses around the bowls as anchor points. Put the Brie wheel in the center. Place aged Gouda wedge near top left, cheddar chunks near bottom right, blue cheese crumbles near goat cheese log. Cut hard cheeses into slices or cubes before placing.
  3. Layer the Meats (5 minutes): Fold prosciutto slices into loose ribbons and place near Brie. Roll salami slices into cylinders and stack near cheddar. Fan out soppressata slices near Gouda. Fold capicola into quarters and arrange near blue cheese.
  4. Fill in with Fruits and Sweets (5 minutes): Scatter grape clusters in empty spaces. Tuck quartered figs near goat cheese. Sprinkle dried cranberries and pomegranate seeds around the board. Place candied walnuts in a small pile near blue cheese.
  5. Add the Crunch (5 minutes): Fill remaining gaps with crackers, toasted baguette slices, and breadsticks. Fan them out in small groups around the board. Place water crackers near Brie, rosemary crackers near Gouda, baguette slices near goat cheese.
  6. Garnish and Final Touches (5 minutes): Tuck fresh rosemary sprigs into gaps. Scatter fresh thyme leaves over cheeses. Add extra pomegranate seeds on top of goat cheese log. Drizzle honey over Brie wheel. Fill any empty spots with extra crackers or grapes.
  7. Serve or Refrigerate: If serving within an hour, leave at room temperature. If making ahead, cover tightly with plastic wrap and refrigerate for up to 4 hours. Remove 30 minutes before serving. Add fresh herbs just before serving.

Notes

Take cheeses out of fridge 30-60 minutes before serving for best flavor. Don’t overcrowd the board – leave about 20% empty space. Prep ingredients the night before to reduce stress on party day. If party lasts more than 2 hours, keep extra crackers in a sealed bag to refresh the board. Assemble no more than 1 hour before serving, or cover and refrigerate.
