These healthy pumpkin banana oat muffins are moist, naturally sweetened, and packed with wholesome ingredients. Perfect for fall mornings, brunches, or any gathering, they come together in about 30 minutes and are always a crowd-pleaser.

  • 3 medium ripe bananas, mashed (about 1 ½ cups)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • ⅓ cup coconut oil, melted
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ cup dark chocolate chips (optional)
  • ½ cup chopped walnuts (optional)
  • ¼ cup dried cranberries (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with cooking spray.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add pumpkin puree, eggs, melted coconut oil, maple syrup, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  4. In a separate medium bowl, whisk together rolled oats, all-purpose flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
  5. Pour the dry ingredients into the wet ingredients. Stir gently with a wooden spoon until just combined (do not overmix). If using mix-ins, fold them in now.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden brown and spring back when lightly touched.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use very ripe bananas (heavily spotted or almost black). Do not overmix the batter to avoid dense muffins. Muffins taste even better the next day as flavors meld. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze individually wrapped for up to 3 months.
