Tender Crockpot Mississippi Pot Roast: Easy Family Dinner

A tender, tangy, and buttery pot roast made effortlessly in the slow cooker. This accidental recipe has become a family favorite, perfect for busy weeknights or impressing guests.

  • 34 pound chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1 stick unsalted butter (8 tablespoons, cut into 4 pieces)
  • 810 pepperoncini peppers (from a jar)
  • 1/4 cup pepperoncini brine
  • 1/2 cup low-sodium beef broth

Instructions

  1. Trim the roast: Place chuck roast on cutting board. Trim off any large, thick pieces of hard white fat (more than 1/2 inch thick). Pat dry with paper towels.
  2. Season the meat: In a small bowl, mix ranch dressing mix and au jus gravy mix. Sprinkle evenly over all sides of the roast, pressing gently into the surface.
  3. Place in slow cooker: Put seasoned roast into a 6-quart slow cooker, fat side up. Arrange pepperoncini peppers around and on top of the roast.
  4. Add liquids and butter: Pour beef broth and pepperoncini brine around the sides of the roast. Place butter pieces on top of the roast, tucking slightly under edges.
  5. Cook low and slow: Cover and cook on low for 8 hours or on high for 5 hours. Do not lift the lid for the first 4 hours.
  6. Check for doneness: Roast is ready when it shreds easily with two forks. If not, cook an additional 30-60 minutes.
  7. Shred the meat: Using two forks, shred the roast directly in the slow cooker. Remove any large pieces of fat. Stir shredded meat into cooking liquid. Let sit 5-10 minutes before serving.
  8. Serve: Use tongs to transfer shredded beef to a serving platter or plates. Spoon some cooking liquid over the top.

Notes

For a thicker gravy, remove shredded meat after cooking, whisk 2 tablespoons cornstarch with 2 tablespoons cold water, add to liquid, and cook on high for 15-20 minutes. This pot roast tastes even better the next day as flavors meld. If your slow cooker runs hot, check liquid level at 6 hours and add more broth if needed.
