These spooky spider cookies are fudgy, rich, and made with black beans and banana for a healthier Halloween treat. Quick to make and topped with dark chocolate legs, they’re a crowd-pleaser that no one will believe is good for you.

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 large ripe banana, mashed
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup rolled oats
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 cup dark chocolate chips (60-70% cacao, for legs)
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine rinsed black beans, mashed banana, maple syrup, and vanilla extract. Blend for 1-2 minutes until completely smooth.
  3. Add cocoa powder, rolled oats, baking powder, and salt to the processor. Pulse until fully combined. Dough should be thick and slightly sticky.
  4. Transfer dough to a bowl and stir in dark chocolate chips by hand.
  5. Scoop dough into balls using a cookie scoop or tablespoon. Place on prepared baking sheet, spacing 2 inches apart. Flatten slightly with palm.
  6. Bake for 10-12 minutes until edges are set and centers are still soft. Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  7. While cookies cool, melt dark chocolate chips and coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth.
  8. Dip each cooled cookie halfway into melted chocolate. Place back on parchment-lined sheet.
  9. Spoon remaining chocolate into a small piping bag or zip-top bag. Snip a tiny corner and pipe four legs on each side of the dipped portion.
  10. Refrigerate cookies for 15 minutes to set chocolate legs. Serve immediately or store.
