These spooky creamy deviled egg eyeballs are a fun, easy, and delicious Halloween appetizer featuring a rich filling of eggs, cream cheese, and mayo, decorated with olive pupils.

  • 6 large hard-boiled eggs, peeled
  • 4 ounces (1/2 cup) cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper to taste
  • 1 tablespoon pimentos, finely chopped
  • 2–3 large black olives, sliced into thin strips
  • Paprika for garnish

Instructions

  1. Place eggs in a single layer in a saucepan, cover with cold water by an inch, and bring to a boil. Reduce heat to low, cover, and let sit for 12 minutes.
  2. Immediately transfer eggs to an ice bath and let cool for at least 10 minutes.
  3. Peel the eggs, pat dry, and slice each egg in half lengthwise. Scoop out yolks into a mixing bowl.
  4. Mash yolks with a fork until fine and crumbly.
  5. Add cream cheese, mayonnaise, Dijon mustard, apple cider vinegar, pimentos, salt, and pepper to the yolks. Mix until smooth and creamy.
  6. Transfer filling to a piping bag fitted with a round tip. Pipe a generous mound into each egg white half to create an eyeball shape.
  7. Slice black olives into thin strips and cut small circles or ovals. Place one piece in the center of each piped mound to create the pupil.
  8. Lightly dust the tops with paprika and serve immediately or refrigerate.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not overmix the filling to prevent deflation. Use an ice bath to make peeling easier and prevent green yolks. Store leftovers in an airtight container in the refrigerator for up to 2 days; do not freeze.
