A bright, spicy, and sweet salsa combining juicy peaches, jalapeños, and fresh cilantro, perfect for summer gatherings or as a topping for grilled dishes.

Ingredients

  • 3 medium fresh peaches, ripe but firm, diced
  • 12 jalapeño peppers, seeded and finely chopped (leave seeds in for extra heat)
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • ½ teaspoon sea salt, or to taste
  • 1 small garlic clove, minced (optional)
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Wash and dry peaches, then dice into roughly ½-inch pieces.
  2. Cut jalapeños lengthwise, scoop out seeds if desired, and finely chop.
  3. Finely chop red onion to about ¼ cup.
  4. In a medium mixing bowl, gently toss together diced peaches, jalapeños, red onion, and minced garlic if using.
  5. Add chopped cilantro and stir to combine.
  6. Squeeze juice of one lime over the salsa, drizzle olive oil if using, and sprinkle sea salt. Stir gently to combine and taste to adjust seasoning.
  7. Let salsa rest at room temperature for 10-15 minutes before serving to allow flavors to meld.

Notes

Use firm, ripe peaches to avoid mushy salsa. Adjust jalapeño seeds to control heat. Let salsa rest before serving for best flavor. Store in airtight container in fridge up to 2 days. Bring to room temperature before serving. Avoid freezing to preserve texture.
