A quick and easy grilled chicken recipe featuring bone-in, skin-on thighs coated in a spicy buffalo sauce balanced with honey sweetness and smoky char.

  • 6 bone-in, skin-on chicken thighs (about 2 lbs / 900 g)
  • ½ cup (120 ml) buffalo sauce (e.g., Frank’s RedHot)
  • 3 tablespoons (45 ml) honey (raw or wildflower)
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (kosher or sea salt)
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper for extra heat or swap honey with maple syrup

Instructions

  1. Prepare the marinade by whisking together buffalo sauce, honey, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, black pepper, and optional cayenne pepper in a mixing bowl.
  2. Pat chicken thighs dry with paper towels. Place them in the bowl or a large resealable bag and pour the marinade over. Toss to coat evenly and refrigerate for at least 30 minutes up to 4 hours.
  3. Preheat grill to medium-high heat (375°F to 400°F). For charcoal grills, arrange coals for indirect heat.
  4. Place chicken thighs skin-side down on grill grates. Cook undisturbed for 7-8 minutes until skin is crispy and golden brown.
  5. Flip thighs and grill the other side for 7-8 minutes.
  6. Move thighs to indirect heat, close the lid, and cook for another 8-10 minutes until internal temperature reaches 165°F (74°C).
  7. Brush extra buffalo honey sauce on chicken during the last 5 minutes of grilling to build layers of flavor.
  8. Remove chicken from grill and let rest on a plate or tray for 5 minutes before serving.

Notes

Pat chicken dry before marinating to ensure crispy skin. Use indirect heat after searing to avoid burning. Avoid flipping too often. Use a meat thermometer to ensure chicken reaches 165°F. If flare-ups occur, move chicken to cooler part of grill. Rest chicken 5 minutes before serving to keep it juicy. For oven method, bake at 425°F for 25-30 minutes, flipping halfway and basting with sauce.
