Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken wings dry with paper towels. Toss wings with olive oil, kosher salt, black pepper, smoked paprika, and garlic powder in a large bowl. Let sit for 10 minutes.
  2. In a medium saucepan over medium heat, combine honey, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, hot sauce, chili powder, cayenne pepper (if using), onion powder, and a pinch of salt. Stir and simmer gently for 8-10 minutes until slightly thickened and glossy. Avoid boiling hard.
  3. Arrange wings in a single layer on a wire rack set inside a rimmed baking sheet. Bake for 35-40 minutes, flipping halfway through, until skin is golden brown and crispy. Wings are done at 165°F (74°C).
  4. Transfer wings to a large bowl. Pour warm spicy honey bourbon BBQ sauce over wings and toss gently but thoroughly to coat evenly.
  5. Serve wings hot with celery sticks and blue cheese or ranch dressing if desired.
