  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (90g)

Instructions

  1. Place the butter in a small saucepan over medium heat. Stir frequently as it melts, then foams, and finally turns golden brown with toasty bits at the bottom. Remove from heat immediately once browned and transfer to a heatproof bowl. Let cool for about 5 minutes.
  2. In a medium bowl, whisk together the browned butter, granulated sugar, brown sugar, and vanilla extract until smooth. Add the egg yolk and whisk until fully combined and slightly thickened.
  3. In a separate bowl, combine the flour, baking soda, and salt. Whisk together to distribute evenly.
  4. Gradually add the dry ingredients to the wet, folding gently with a spatula until just combined. Do not overmix; some flour streaks are okay.
  5. Fold in the chocolate chips with a few gentle strokes. The dough will be thick and slightly sticky.
  6. Using a tablespoon or cookie scoop, form eight evenly sized balls and place them on a parchment-lined baking sheet, spaced about 2 inches apart. Chill in the fridge for 10 minutes.
  7. Preheat oven to 350°F (175°C). Bake cookies for 10 to 12 minutes until edges are golden and centers look set but still soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not skip browning the butter for best flavor. Use only the egg yolk for chewy texture. Chill dough before baking to prevent spreading. Measure flour accurately using scoop-and-level or weighing method. Start checking cookies at 10 minutes to avoid overbaking.
