  • 23 sprigs fresh dill or 1 tablespoon dried dill weed
  • 2 garlic cloves, peeled and smashed
  • 1 cup (240 ml) distilled white vinegar
  • 1 cup (240 ml) water, preferably filtered or distilled
  • 1 tablespoon kosher salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon whole black peppercorns
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Wash 1 pound (450 g) of small pickling cucumbers thoroughly and slice into spears or rounds.
  2. In a mixing bowl, combine 1 cup (240 ml) white vinegar, 1 cup (240 ml) water, 1 tablespoon kosher salt, and 1 teaspoon granulated sugar. Stir until salt and sugar dissolve completely.
  3. Add 2 smashed garlic cloves, 2-3 sprigs fresh dill (or 1 tablespoon dried), 1 teaspoon whole black peppercorns, and ¼ teaspoon red pepper flakes if using. Stir gently to combine.
  4. Place sliced cucumbers tightly into a clean 1-quart (1-liter) glass jar, tucking garlic, dill, peppercorns, and red pepper flakes evenly among them.
  5. Pour the prepared brine over the cucumbers until fully submerged. Use a spoon or tongs to press cucumbers down if needed.
  6. Seal the jar tightly and refrigerate for at least 24 hours before tasting.
  7. Enjoy pickles straight from the jar, on sandwiches, or as a salad topping. Store in the refrigerator for up to 3 weeks.

Notes

Use smaller pickling cucumbers like Kirby or Persian for best crunch. Avoid overfilling the jar to allow brine circulation. Keep cucumbers fully submerged to prevent spoilage. Use kosher salt to avoid cloudiness. Warm brine slightly to dissolve salt and sugar but cool before adding cucumbers. For crisper pickles, soak cucumbers in ice water for 30 minutes before pickling. Adjust vinegar amount to taste if pickles are too sour or not tangy enough.
