Creamy, naturally sweet overnight oats made with peanut butter and banana. A simple 5-minute prep that gives you a healthy, grab-and-go breakfast all week.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/4 cup creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon honey or maple syrup (optional)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Sliced banana (for topping, optional)
  • Chopped peanuts or almonds (for topping, optional)
  • Extra peanut butter drizzle (for topping, optional)
  • Cinnamon or cocoa nibs (for topping, optional)

Instructions

  1. Mash the banana in a jar or container until mostly smooth with a few small lumps.
  2. Add milk, peanut butter, honey or maple syrup (if using), and vanilla extract. Do not stir yet.
  3. Sprinkle rolled oats and salt on top. Do not stir yet.
  4. Mix thoroughly with a fork or small whisk until oats are evenly coated and peanut butter is fully incorporated.
  5. Seal the jar and refrigerate for at least 6 hours, preferably 8-12 hours.
  6. Serve cold or warm. If too thick, stir in a splash of milk. Microwave for 30-45 seconds if desired. Top with optional toppings.

Notes

Use a ripe banana with brown spots for best sweetness and texture. If peanut butter is thick, warm it for 10 seconds before adding. Taste before refrigerating and adjust sweetness if needed. Do not over-stir. For meal prep, make multiple jars for the week.
