  • 4 salmon fillets (6 oz / 170 g each), skin-on or skinless
  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon rice vinegar
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 tablespoon vegetable oil or neutral oil (canola or avocado)
  • 1 pound baby bok choy, halved lengthwise
  • 1 tablespoon toasted sesame oil
  • 1 garlic clove, minced
  • 1 teaspoon soy sauce or tamari
  • 1 tablespoon toasted sesame seeds
  • Pinch of salt and pepper

Instructions

  1. Prepare the glaze: In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger. Set aside.
  2. Prep the salmon: Pat salmon fillets dry with paper towels. Season lightly with salt and pepper on both sides. Let sit for 5 minutes.
  3. Cook the bok choy: Heat a skillet over medium-high heat and add toasted sesame oil. Add minced garlic and sauté for 30 seconds until fragrant. Add halved bok choy cut side down and cook 2-3 minutes until slightly charred. Flip and cook 2 more minutes until tender but crisp. Season with soy sauce, salt, and pepper. Remove from heat and sprinkle with toasted sesame seeds. Keep warm.
  4. Cook the salmon: In the same skillet, add vegetable oil and heat over medium-high. Place salmon skin-side down if skin-on. Cook without moving for 4-5 minutes until skin is crispy and salmon is about two-thirds cooked.
  5. Glaze the salmon: Flip salmon carefully and brush top generously with honey sriracha glaze. Cook 2-3 minutes, brushing more glaze halfway through, until cooked through (internal temp 125-130°F). Glaze should be sticky and caramelized but not burnt.
  6. Serve: Plate salmon alongside sesame bok choy. Spoon extra glaze from pan over salmon. Garnish with extra sesame seeds or sliced green onions if desired.

Notes

If glaze thickens before use, stir in a splash of water to loosen. Avoid overcrowding the pan when cooking salmon for a perfect sear. Use tamari or coconut aminos for gluten-free option. Wild-caught salmon recommended for best texture. Leftovers keep well refrigerated for up to 2 days; reheat gently in skillet to preserve texture.
