These Quick Healthy Turkey Meatball Meal Prep Bowls are proof that meal prep doesn’t have to be boring or dry. They come together in 30 minutes, use simple ingredients, and actually taste goodโ€”even on day four.

  • 1 pound lean ground turkey (93/7)
  • 1/2 cup plain breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa or brown rice
  • 2 cups roasted vegetables (broccoli, bell peppers, zucchini)
  • 1 cup cherry tomatoes, halved
  • Fresh parsley or basil for garnish (optional)
  • 3 tablespoons olive oil (for dressing)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced (for dressing)
  • Salt and pepper to taste (for dressing)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or foil. If you have a cooling rack, place it on the baking sheet now.
  2. Start the quinoa or rice. If using quick-cook quinoa, it takes about 15 minutes. Use 1 cup dry quinoa with 2 cups water, bring to a boil, then simmer covered for 15 minutes.
  3. Make the meatball mixture. In a large bowl, combine the ground turkey, breadcrumbs, beaten egg, Parmesan cheese, minced garlic, oregano, onion powder, salt, and pepper. Use your hands to mix gently until just combined, about 30 seconds.
  4. Form the meatballs. Wet your hands slightly with water to prevent sticking. Roll the mixture into 20-24 meatballs, about 1.5 tablespoons each. Place them on the prepared baking sheet, spaced about an inch apart.
  5. Brush with olive oil. Using a pastry brush or your fingers, lightly brush each meatball with olive oil.
  6. Bake for 15-18 minutes. No flipping needed if using a cooling rack. If baking directly on the sheet, flip them gently at the 8-minute mark. They’re done when the internal temperature reaches 165ยฐF (74ยฐC) and the outside is golden brown.
  7. While the meatballs bake, prep your vegetables. Chop broccoli into florets, slice bell peppers, and halve cherry tomatoes. Toss the broccoli and peppers with a little olive oil, salt, and pepper. Spread on a separate baking sheet and roast at 400ยฐF for about 12-15 minutes.
  8. Make the dressing. In a small jar or bowl, combine olive oil, lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper. Shake or whisk until emulsified.
  9. Assemble the bowls. Divide the cooked quinoa or rice among 4-5 meal prep containers. Top with roasted vegetables, cherry tomatoes, and 4-5 meatballs per bowl. Drizzle the dressing over everything, or keep it separate.
  10. Cool completely before sealing. Let the containers sit open on the counter for about 20 minutes before refrigerating.

Notes

Don’t overmix the meatball mixture to keep them tender. Use a cookie scoop for even sizing. Let meatballs rest for 5 minutes after baking. Keep dressing separate to prevent sogginess. Store in refrigerator for up to 4 days. Freeze cooked meatballs for up to 3 months.
