Quick Green Bean Casserole with Easy Crispy Fried Onions

A streamlined version of the classic green bean casserole, featuring creamy mushroom sauce, tender-crisp green beans, and a double layer of crunchy fried onions and toasted panko. Ready in under 30 minutes, it’s comfort food reimagined for busy weeknights.

  • 1 pound (450g) fresh green beans, trimmed and halved
  • 1 can (10.5 oz / 298g) cream of mushroom soup
  • 1/2 cup (120ml) whole milk
  • 1 1/2 cups (150g) fried onions (such as French’s original)
  • 2 tablespoons (28g) salted butter, melted
  • 1/3 cup (30g) panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for exactly 2 minutes. Drain in a colander and immediately run cold water over them to stop the cooking process. Let drain well, then pat dry with a clean kitchen towel.
  3. In a medium bowl, whisk together the cream of mushroom soup, milk, garlic powder, and a pinch of black pepper until smooth.
  4. Add the blanched green beans to the soup mixture and stir to coat evenly.
  5. Pour half of the bean mixture into a greased 9×13-inch baking dish and spread into an even layer. Sprinkle 3/4 cup of the fried onions over the top.
  6. Add the remaining bean mixture on top, spreading gently without pressing down.
  7. In a small skillet, melt the butter over medium heat. Add the panko breadcrumbs and stir for 2-3 minutes, until golden and fragrant.
  8. Sprinkle the toasted panko over the casserole, followed by the remaining 3/4 cup of fried onions.
  9. Bake for 20-25 minutes, until bubbly and golden on top. Let rest for 5 minutes before serving.

Notes

For best texture, don’t skip blanching the beans. Pat beans dry to avoid watery casserole. Toasting panko in butter creates a crunchy barrier. Let casserole rest 5 minutes before serving to allow sauce to thicken. For make-ahead: assemble completely (including toppings) up to 24 hours in advance, refrigerate, and add 5-10 minutes to baking time.
