A quick and easy sheet pan dinner featuring tender garlic butter steak and crisp roasted broccoli, perfect for busy weeknights with minimal cleanup.

Ingredients

Scale
  • 1 pound flank steak or sirloin, sliced into thin strips
  • 4 cups fresh broccoli florets (about 300g), trimmed
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt, plus more to taste
  • ยฝ teaspoon freshly cracked black pepper
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC) and allow about 10 minutes for it to fully heat.
  2. In a small bowl, whisk together melted butter, minced garlic, olive oil, lemon juice, salt, black pepper, and red pepper flakes if using.
  3. Place the sliced steak in a medium bowl and pour half of the garlic butter mixture over it. Toss to coat thoroughly and let sit for 5 minutes.
  4. In another bowl, toss the broccoli florets with the remaining garlic butter mixture until well coated.
  5. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  6. Spread the broccoli florets on one side of the pan in a single layer and arrange the steak strips on the other side without overlapping.
  7. Roast in the oven for 12-15 minutes. At around 8 minutes, gently toss the broccoli or flip the steak strips to ensure even cooking.
  8. Check for doneness: 12 minutes usually yields medium-rare steak; add 2-3 minutes for more doneness but avoid overcooking. Broccoli should be tender with crisp edges.
  9. Remove from oven, sprinkle chopped fresh parsley over everything, and serve immediately.

Notes

Thinly slice steak against the grain for tenderness. Avoid overcrowding the pan to prevent steaming. Use room temperature ingredients for even cooking. Watch garlic carefully to avoid burning; add halfway through cooking if needed. Let steak rest briefly after roasting to lock in juices. For dairy-free, substitute butter with coconut oil. Variations include swapping steak for chicken or pork, or broccoli for other vegetables.
