This quick garlic butter shrimp pasta is a 15-minute weeknight hero made with simple ingredients like butter, garlic, shrimp, and pasta. The nutty browned butter and crispy garlic bits create an incredibly delicious meal that tastes like you spent an hour on it.

  • 8 ounces (225g) spaghetti or linguine
  • Salt for the pasta water
  • 1 pound (450g) raw shrimp, peeled and deveined
  • 4 tablespoons (56g) unsalted butter
  • 6 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup (60ml) dry white wine or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/2 lemon
  • Grated Parmesan cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add a generous tablespoon of salt. Once boiling, add the pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta cooks, pat the shrimp completely dry with paper towels. Season with a pinch of salt and pepper.
  3. Heat a large skillet over medium-high heat. Add the butter and let it melt completely. Add the sliced garlic and red pepper flakes. Cook for 1-2 minutes, stirring constantly, until the garlic starts to turn golden at the edges.
  4. Add the shrimp in a single layer. Cook undisturbed for 2 minutes, then flip and cook for another 1-2 minutes until pink all the way through.
  5. Pour in the white wine or broth. Scrape up any brown bits from the bottom of the pan. Let it bubble for about 30 seconds until slightly reduced.
  6. Add the drained pasta directly to the skillet. Toss everything together with tongs. If the sauce seems too thick, add a splash of the reserved pasta water.
  7. Turn off the heat. Squeeze the lemon half over the pasta and toss again. Taste and adjust salt and pepper if needed.
  8. Serve immediately. Divide the pasta between bowls, top with extra parsley and a generous shower of grated Parmesan.

Pat the shrimp dry for a golden sear. Slice garlic thinly to create crispy bits. Use pasta water to emulsify the sauce. Cook pasta al dente. Work quickly once garlic hits the butter. Best served immediately.
