Instructions

  1. Thinly slice chicken into even strips. Mince garlic, slice zucchini thinly, and chop fresh herbs.

  3. Add chicken strips in a single layer, season with salt and pepper. Cook undisturbed for 3 minutes until golden on one side, then flip and cook another 3 minutes until fully cooked.
  4. Add minced garlic and sliced zucchini, stirring quickly. Cook for about 2 minutes until zucchini softens but still has a little bite.
  5. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 1-2 minutes to reduce slightly.
  6. Squeeze lemon juice over the pan, stir in chopped herbs, and adjust seasoning with salt and pepper.
  7. Serve immediately, optionally topped with Parmesan cheese or pine nuts.
