Instructions

  1. Wash English cucumbers thoroughly. Cut off ends, slice in half lengthwise, and scrape out seeds if needed. Slice into 1/4-inch half-moons.
  2. Place sliced cucumbers in a medium bowl and sprinkle with 1 teaspoon kosher salt. Toss well and let sit for 10 minutes to draw out excess moisture.
  3. After 10 minutes, transfer cucumbers to a colander and rinse briefly with cold water. Shake off excess water, then pat dry with a clean kitchen towel or paper towels.
  4. Peel red onion, cut in half through root end, and slice as thinly as possible. If desired, soak slices in cold water for 5 minutes to mellow the bite, then drain and pat dry.
  5. In a large bowl, whisk together sour cream, mayonnaise, white wine vinegar, minced garlic, and black pepper until smooth and creamy. Taste and adjust seasoning.
  6. Wash and chop fresh dill coarsely, discarding thick stems. Measure about 1/4 cup packed.
  7. Add dried cucumbers, sliced red onion, and chopped dill to the bowl with dressing. Toss gently until well coated. Fold in crumbled feta cheese carefully to keep pieces intact.
  8. Serve immediately or chill in the refrigerator for 15-30 minutes to allow flavors to meld. Garnish with extra dill and black pepper if desired.
