A warm, sweet, and comforting breakfast casserole made with simple pantry ingredients. Ready in just 30 minutes, it’s perfect for busy mornings and features soft, custard-soaked bread with tender, spiced apples.

  • 6 cups day-old bread, cubed (about 1-inch pieces)
  • 2 large apples, peeled and chopped (about 2 cups)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 large eggs, at room temperature
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • A pinch of salt
  • 2 tablespoons brown sugar (for topping)
  • 1/4 cup chopped pecans or walnuts (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a small bowl, toss chopped apples with melted butter, 1/4 cup brown sugar, 1 teaspoon cinnamon, and nutmeg until well coated. Spread evenly in the prepared baking dish.
  3. In a large mixing bowl, whisk eggs until light and frothy. Add milk, vanilla, granulated sugar, and salt. Whisk until sugar is mostly dissolved and mixture is uniform.
  4. Add cubed bread to the custard mixture. Gently fold with a rubber spatula until all bread cubes are coated. Let sit for 2-3 minutes to absorb.
  5. Pour bread and custard mixture over the apples in the baking dish, spreading into an even layer. In a small bowl, mix remaining 2 tablespoons brown sugar with a pinch of cinnamon and chopped nuts. Sprinkle over the top.
  6. Bake for 20-25 minutes, until top is golden brown and center is just set (a knife inserted in the center should come out clean or with a few moist crumbs).
  7. Let casserole rest for at least 5 minutes before serving. Serve warm.

Notes

For best results, use day-old or slightly stale bread. If using fresh bread, toast cubes at 350°F for 5-7 minutes to dry them out. Let the casserole rest for 5 minutes after baking to allow the custard to set. To make ahead, assemble the casserole the night before, cover, and refrigerate. Add 5 extra minutes to baking time if starting from cold.
