A hearty and flavorful taco soup made with ground beef, beans, corn, and a secret blend of taco and ranch seasonings. Ready in just 30 minutes, this crowd-pleasing soup is perfect for busy weeknights and potlucks.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 packet (1 ounce) ranch seasoning
  • 1 can (14.5 ounces) diced tomatoes with green chiles (Rotel)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) tomato sauce
  • 2 cups beef broth
  • Shredded cheddar cheese (optional topping)
  • Sour cream (optional topping)
  • Fresh cilantro, chopped (optional topping)
  • Tortilla chips or strips (optional topping)
  • Diced avocado (optional topping)
  • Lime wedges (optional topping)

Instructions

  1. Brown the ground beef in a large Dutch oven or heavy-bottomed pot over medium-high heat, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Drain excess fat, leaving about 1 tablespoon in the pot.
  2. Add the diced onion to the pot and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle the taco seasoning and ranch seasoning over the beef and onion mixture. Stir and cook for 1 minute to toast the spices.
  4. Pour in the undrained diced tomatoes with green chiles, tomato sauce, and beef broth. Stir, scraping up any browned bits from the bottom of the pot.
  5. Add the drained black beans, kidney beans, and corn. Stir gently to combine.
  6. Bring the soup to a boil over high heat (3-4 minutes), then reduce heat to medium-low and simmer for 15 minutes, allowing flavors to meld.
  7. Taste and adjust seasoning if needed (add salt, pepper, or a squeeze of lime juice).
  8. Ladle into bowls and serve with desired toppings: cheese, sour cream, cilantro, tortilla chips, avocado, and lime wedges.

Notes

For best flavor, brown the beef properly and toast the seasoning packets. The soup thickens as it sits; add more broth if needed. Leftovers taste even better the next day. For a thicker soup, simmer uncovered longer or mash some beans against the pot.
