Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a 9- or 10-inch round pizza pan or line a baking sheet with parchment paper.

  9. Add 1 cup sifted powdered sugar and 1 teaspoon vanilla extract, then mix on low speed. Gradually add 1-2 tablespoons milk or heavy cream to reach desired spreading consistency.
  10. Spread the frosting evenly over the cooled sugar cookie base.
  11. Arrange sliced strawberries, blueberries, kiwi, and mandarin orange segments on top of the frosting in any pattern.
  12. Garnish with fresh mint leaves if desired, then chill the fruit pizza for at least 30 minutes before slicing.
