A quick and easy seven-layer dip with homemade tortilla chips that’s perfect for game day, potlucks, or any casual get-together. This crowd-pleasing recipe comes together in under 30 minutes with simple ingredients.

  • 1215 corn tortillas (6-inch size)
  • 3 tablespoons olive oil or avocado oil
  • 1 teaspoon fine sea salt
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon chili powder
  • 1 can (16 oz) refried beans (e.g., Rosarita or Old El Paso)
  • 1 cup sour cream (full-fat preferred)
  • 1 cup guacamole (homemade or store-bought)
  • 1 cup salsa (medium or mild, chunky preferred)
  • 1½ cups shredded cheddar cheese or Mexican blend
  • ½ cup diced tomatoes (seeded)
  • ¼ cup sliced black olives (optional)
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño, sliced (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Stack corn tortillas in piles of 3-4 and cut into triangles using a pizza cutter or sharp knife (6 wedges per stack).
  2. Spread tortilla triangles in a single layer on a parchment-lined baking sheet. In a small bowl, mix olive oil, salt, garlic powder, and chili powder. Brush mixture lightly over each triangle, flip, and brush the other side.
  3. Bake for 8-10 minutes, then flip each chip and bake for another 5-7 minutes until golden and crispy. Watch closely to avoid burning. Chips will continue to crisp as they cool.
  4. While chips bake, warm refried beans in a microwave for 30 seconds to make them spreadable. If making fresh guacamole, mash 2 ripe avocados with lime juice, salt, and a pinch of cumin. Dice tomatoes and remove seeds. Shred cheese if using a block.
  5. In a 9×13-inch baking dish or large pie plate, spread refried beans evenly across the bottom. Gently spread sour cream over the beans. Follow with guacamole, being careful not to mix layers. Spoon salsa over guacamole and spread gently.
  6. Sprinkle shredded cheese evenly over the top. Add diced tomatoes and black olives. Finish with green onions and cilantro.
  7. Serve immediately with warm homemade chips, or refrigerate for up to 2 hours. If chilling, add tomatoes, olives, and green onions just before serving.

Notes

Warm refried beans for easier spreading. Drain salsa to prevent runny dip. Layer order matters: beans, sour cream, guacamole, salsa, cheese. Make extra chips as they disappear quickly. For make-ahead, press plastic wrap onto guacamole layer to prevent browning. Let refrigerated dip sit out 15 minutes before serving for best flavor.
