  • 2 ribeye or New York strip steaks (about 8 oz / 225 g each, 1 to inches thick)
  • Coarse kosher salt
  • Freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, smashed
  • A few sprigs of thyme or rosemary (optional)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Bring steaks to room temperature (about 30 minutes). Pat dry with paper towels.
  2. Season generously with kosher salt and freshly ground black pepper on both sides.
  3. Preheat cast iron pan over medium-high heat for 5 minutes until smoking hot but not burning.
  4. Add 1 tablespoon olive oil to the pan and swirl to coat.
  5. Place steaks in the pan and sear without moving for 3-4 minutes per side for medium-rare, adjusting time for thickness.
  6. Lower heat to medium and add butter, smashed garlic, and herbs to the pan.
  7. Tilt the pan slightly and spoon the melted butter mixture over the steaks repeatedly for 1-2 minutes to baste.
  8. Check doneness with a meat thermometer (130°F for medium-rare, 140°F for medium) or by pressing the steak.
  9. Transfer steaks to a warm plate, loosely cover with foil, and rest for 5-10 minutes before serving.

Notes

If kitchen fills with smoke, open a window or use exhaust fan. Do not overcrowd the pan; cook one or two steaks at a time. For dairy-free option, replace butter with avocado or coconut oil. Let steak rest before slicing to retain juices. Use tongs to flip steaks to avoid piercing and losing juices.
