  1. Prepare the Hollandaise Sauce (about 15 minutes): In a heatproof bowl, whisk together 3 egg yolks and 1 tablespoon lemon juice until light and slightly thickened. Place the bowl over a pot of gently simmering water (double boiler style). Slowly drizzle in the melted butter while whisking continuously until the sauce thickens and coats the back of a spoon.
