Ingredients

  • Manchego, thinly sliced
  • Brie, at room temperature
  • Aged Gouda, cubed or sliced
  • Prosciutto, thinly sliced
  • Salami (Genoa or soppressata), sliced into rounds
  • Chorizo, sliced (optional)
  • Crackers (mix of plain water crackers and seedy or whole wheat)
  • Red grapes
  • Apple or pear, sliced (tossed in lemon juice)
  • Dried figs or apricots
  • Marcona almonds or toasted walnuts
  • Fig jam or honey
  • Castelvetrano or kalamata olives
  • Cornichons or pickled vegetables (optional)
  • Dark chocolate (optional)
  • Fresh herbs like rosemary or thyme sprigs (optional)

Instructions

  1. Start with the bowls (2 minutes): Place small bowls for spreads, olives, and honey on the board first, positioning them at corners or in a triangle pattern to anchor the layout.
  2. Add the cheeses (3 minutes): Place brie whole or cut into wedges. Slice manchego into thin triangles and fan them out. Cube aged gouda into bite-sized pieces. Space cheeses evenly across the board. Keep brie at room temperature for at least 20 minutes before serving.
  3. Layer the meats (2 minutes): Fold prosciutto slices into loose ribbons or roll into rosettes. Arrange near cheeses. Fan salami rounds in a line or pile casually.
  4. Fill in with fruit and nuts (3 minutes): Scatter clusters of grapes around the board. Place sliced apple or pear near brie. Add dried figs or apricots in small piles. Sprinkle almonds or walnuts into any gaps.
  5. Add crackers and bread (2 minutes): Arrange crackers in rows or small stacks around edges of board, placing them near cheeses they pair best with.
  6. Finish with garnishes (1 minute): Drizzle honey over brie or manchego. Tuck fresh rosemary sprigs between piles for color. Add cornichons or pickles in a small cluster.

Notes

Take cheeses out 20-30 minutes before serving for best flavor. Don’t overcrowd the board; leave breathing room between items. Prep everything before your date arrives to reduce stress. For best results, serve at room temperature.
