  • 1 ¾ cups (220 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 4 tablespoons (57 g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120 ml) buttermilk
  • For the cinnamon sugar coating:
  • ½ cup (100 g) granulated sugar
  • 1 ½ tablespoons ground cinnamon
  • 3 tablespoons (42 g) unsalted butter, melted

Instructions

  1. Reduce the apple cider: Pour 1 ½ cups apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-18 minutes, stirring occasionally, until reduced to about ⅓ cup and syrupy. Remove from heat and let cool.
  2. Preheat oven to 350°F (175°C). Lightly grease a standard 6-well donut pan with non-stick spray or melted butter.
  3. In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a small bowl, whisk together reduced apple cider, melted butter, egg, vanilla extract, and buttermilk until smooth.
  5. Pour wet ingredients into dry ingredients. Stir gently until just combined; do not overmix. A few lumps are fine.
  6. Transfer batter to a piping bag or Ziploc bag with a corner snipped off. Pipe batter into each donut cavity, filling about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean.
  8. Let donuts cool in the pan for 2-3 minutes, then turn out onto a cooling rack. While still warm, brush each donut with melted butter, then dip into cinnamon sugar mixture to coat all sides.
  9. Serve immediately or store in an airtight container at room temperature for up to 2 days.

Notes

Reduce the apple cider until syrupy for best flavor. Do not overmix the batter. For best coating, brush donuts with butter while warm but not hot. Store uncoated donuts in the freezer for up to 2 months; coat after thawing.
