A quick and easy cranberry sauce made with fresh cranberries, orange, sugar, and fresh ginger. Ready in under 20 minutes, this bright and slightly spicy sauce is perfect for holiday gatherings or weeknight dinners.

  • 12 ounces (340g) fresh cranberries
  • 1 large fresh orange (juice and zest)
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon grated fresh ginger (about a 2-inch piece)
  • 1/4 cup (60ml) water

Instructions

  1. Rinse the cranberries in a colander and pick out any soft or shriveled ones. Zest the orange before cutting it open (about 1 teaspoon zest). Cut the orange in half and juice it (about 1/3 cup/80ml). Peel and finely grate the ginger. Measure out the sugar and water.
  2. In a medium saucepan, combine the cranberries, orange juice, orange zest, sugar, grated ginger, and water. Stir briefly.
  3. Bring the mixture to a rolling boil over medium-high heat, about 3-4 minutes. Listen for the cranberries to start popping.
  4. Reduce the heat to medium-low so the sauce is at a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the cranberries have burst and the sauce has thickened to a syrupy consistency.
  5. Test for doneness by dipping a spoon in the sauce and running your finger down the back. If the sauce leaves a clean line, it’s ready. If still too runny, simmer for another 2-3 minutes.
  6. Remove from heat and let cool for about 10 minutes. The sauce will continue to thicken as it cools. Serve warm, at room temperature, or chilled.

Notes

The sauce improves after a day in the fridge. Make ahead for best flavor. For a smoother sauce, blend with an immersion blender. Adjust sugar to taste. Do not double the batch in the same pot; use a larger pot or make separate batches.
