Ingredients

Scale
  • 6 cups whole milk (1.4 liters)
  • 1 cup heavy cream (240 ml)
  • 1 cup semi-sweet chocolate chips (175 grams)
  • 1/2 cup unsweetened cocoa powder (50 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of cayenne pepper (optional)
  • 1 tablespoon vanilla extract
  • Whipped cream (for serving, optional)
  • Chocolate shavings or sprinkles (for serving, optional)
  • Cinnamon sticks (for serving, optional)
  • Mini marshmallows (for serving, optional)

Instructions

  1. Prep your crockpot: Rinse and dry the insert. Set to LOW.
  2. Mix dry ingredients: In a small bowl, whisk together cocoa powder, sugar, cinnamon, nutmeg, ginger, and cayenne (if using).
  3. Start the milk base: Pour milk and heavy cream into the crockpot and stir.
  4. Add dry ingredients: Slowly pour the dry mixture into the milk while whisking constantly until smooth.
  5. Add chocolate chips: Pour in the chocolate chips and let them sit on top without stirring.
  6. Add vanilla: Drizzle in the vanilla extract.
  7. Cover and cook: Cook on LOW for 2 to 3 hours, stirring occasionally after 1.5 hours.
  8. Taste and adjust: Taste and add more sugar or spice if desired.
  9. Switch to WARM: Once perfect, switch crockpot to WARM setting to keep at serving temperature.
  10. Serve and garnish: Ladle into mugs, top with whipped cream, chocolate shavings, cinnamon sticks, or marshmallows as desired.

Notes

Do not let the brew boil; cook on LOW to avoid scorching. If lumps form, whisk vigorously or use an immersion blender. For a spiked version, stir in 1/2 cup dark rum, bourbon, or peppermint schnapps after cooking. For dairy-free, use full-fat oat milk and coconut cream. Leftovers can be refrigerated for up to 4 days and reheated on the stovetop.
