A naturally green Halloween punch made with spinach, kiwi, pineapple juice, and limeade. It’s light, refreshing, and free from artificial dyes and high fructose corn syrup.

Ingredients

Scale
  • 2 cups packed fresh spinach
  • 3 medium ripe kiwis, peeled and roughly chopped
  • 1 cup chilled pineapple juice
  • 1/2 cup thawed limeade concentrate
  • 3 cups chilled sparkling water
  • 2 tablespoons honey or agave syrup (optional)
  • Ice cubes as needed
  • Optional garnishes: kiwi slices, edible flowers, or frozen gummy eyeballs

Instructions

  1. Wash the spinach thoroughly and pat it dry. Peel the kiwis and roughly chop them.
  2. Add the spinach, chopped kiwis, and 1/2 cup of the pineapple juice to a blender. Blend on high for 45-60 seconds until completely smooth.
  3. Pour the blended mixture through a fine-mesh strainer into a bowl, pressing with a spatula to extract as much liquid as possible. Discard the solids.
  4. In a punch bowl or pitcher, combine the strained green liquid with the remaining 1/2 cup of pineapple juice and the thawed limeade concentrate. Stir gently. Taste and add honey or agave if desired.
  5. Cover and refrigerate for at least 30 minutes, or up to 24 hours.
  6. Just before serving, pour in the chilled sparkling water and stir gently. Add ice cubes or an ice ring.
  7. Garnish with kiwi slices, edible flowers, or frozen gummy eyeballs. Serve immediately.

Notes

For the brightest green color, use cold ingredients and don’t over-blend. Strain for a smooth texture. Add sparkling water just before serving to keep the fizz. The punch base can be made up to 3 days ahead.
