Lighter Monster Eyeball Deviled Eggs

These lighter monster eyeball deviled eggs are a fun and healthy Halloween snack made with Greek yogurt, olives, and sriracha. Perfect for parties, they’re creamy, tangy, and sure to be a crowd-pleaser.

  • 1/3 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (plus more for garnish)
  • 1 can (6 ounces) large pitted black olives
  • Sriracha sauce
  • Optional: Fresh chives or green onion for garnish

Instructions

  1. Boil the eggs: Place eggs in a single layer in a large pot, cover with cold water by an inch. Bring to a rolling boil, cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: Transfer eggs to a bowl of ice water and chill for at least 5 minutes.
  3. Peel the eggs: Tap each egg to crack the shell, roll between palms, and peel starting from the wider end. Rinse under cool water.
  4. Halve the eggs: Slice each egg lengthwise, remove yolks to a medium bowl, and arrange whites on a serving platter.
  5. Make the filling: Add Greek yogurt, mayonnaise, Dijon mustard, white vinegar, salt, pepper, and paprika to the yolks. Mash with a fork until smooth, then stir until uniform. Adjust seasoning to taste.
  6. Prepare the olive pupils: Drain and pat olives dry. Slice crosswise into 1/4-inch rounds (about 24 rounds). Set aside.
  7. Pipe the filling: Spoon filling into a piping bag or zip-top bag. Snip off 1/2 inch from the corner and pipe into each egg white half, mounding slightly.
  8. Add the pupils: Place one olive round in the center of each filled egg half, pressing gently.
  9. Create the blood vessels: Dip a toothpick into sriracha and draw thin lines radiating from the olive outward (2-3 per egg).
  10. Garnish and serve: Sprinkle with chives if desired, dust with paprika, and serve immediately or refrigerate.

Notes

For best results, use slightly older eggs (a week old) for easier peeling. Add sriracha blood vessels right before serving for the freshest look. The assembled eggs can be refrigerated for up to 24 hours.
