  • 8 ounces wide egg noodles
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Fresh dill, chopped (for garnish)
  • Lemon wedges (for garnish)

Instructions

  1. Prep your vegetables: Dice onion, carrots, and celery into 1/4-inch cubes. Mince garlic.
  2. Sauté the aromatics: Melt butter in a Dutch oven over medium heat. Add onion, carrots, and celery. Cook 6-7 minutes until softened. Add garlic and cook 1 minute until fragrant.
  3. Make the roux: Sprinkle flour over vegetables and stir constantly for 1-2 minutes until light golden.
  4. Add liquids: Slowly pour in chicken broth while whisking. Add milk and heavy cream (if using). Bring to a gentle simmer. Add bay leaf, thyme, and rosemary. Simmer 5 minutes until slightly thickened.
  5. Cook noodles: Add egg noodles to simmering broth. Cook according to package directions (6-8 minutes), stirring occasionally.
  6. Add chicken: Stir in shredded rotisserie chicken and cook 1-2 minutes until heated through.
  7. Season and finish: Remove bay leaf. Adjust salt and pepper. Stir in fresh parsley and dill if using. Squeeze lemon wedge over top.
  8. Rest and serve: Let soup sit off heat for 5 minutes. Ladle into bowls and garnish with fresh herbs and lemon wedges.

Notes

For meal prep, cook noodles separately and add to individual bowls when serving to prevent mushiness. If soup is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in. If too thick, add more broth or milk. For extra flavor, add a Parmesan rind while simmering.
