  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ยฝ cup sour cream, room temperature
  • ยผ cup semi-sweet chocolate chips, melted
  • 1 tablespoon coconut oil or vegetable oil

Instructions

  1. Preheat oven to 325ยฐF (163ยฐC). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick cooking spray.
  2. Crush chocolate sandwich cookies into fine crumbs using a food processor or a zip-top bag and rolling pin. Transfer to a medium bowl, add melted butter, sugar, and salt, and stir until evenly moistened.
  3. Press the crumb mixture firmly into the prepared pan using the bottom of a measuring cup. Bake for 10 minutes, then remove and set aside to cool slightly. Keep oven on.
  4. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth, about 2 minutes. Add sugar and beat for another minute. Add eggs one at a time, beating on low after each addition. Mix in vanilla and sour cream until smooth.
  5. Pour cheesecake filling over the warm crust and spread evenly. Tap the pan gently on the counter to release air bubbles. Bake for 30 to 35 minutes, until edges are set and center is slightly jiggly.
  6. Cool to room temperature on a wire rack, about 1 to 2 hours. Then refrigerate for at least 4 hours, preferably overnight.
  7. Melt chocolate chips with coconut oil in a microwave-safe bowl in 20-second intervals, stirring until smooth. Let cool for 2 minutes. Drizzle in a spiral pattern on the chilled cheesecake. Use a toothpick to drag lines from the center outward to create a spiderweb design.
  8. Return to refrigerator for 30 minutes to set the chocolate. Use parchment handles to lift the block out, cut into 16 squares, and serve cold or at room temperature.

Notes

Room temperature ingredients are crucial for a smooth texture. Don’t overmix the filling to avoid cracks. The bars taste even better the next day. For clean cuts, chill thoroughly and wipe the knife between slices.
