Kid-Approved One-Bowl Banana Bread (No Mixer)

This easy, one-bowl banana bread requires no mixer and comes together in minutes. It’s moist, tender, and perfectly sweet—a family favorite that even picky kids love.

  • 3 large ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (90g) chocolate chips, chopped walnuts, or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter and stir until combined.
  4. Mix in the sugar, egg, and vanilla extract until well incorporated and smooth.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a wooden spoon or rubber spatula until just combined—about 10 to 12 strokes. Do not over-mix.
  6. If using, fold in chocolate chips, nuts, or dried fruit with 5 to 6 strokes.
  7. Let the batter rest for 5 minutes at room temperature.
  8. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  9. Bake for 55 to 65 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe bananas with brown spots. Let the batter rest for 5 minutes before baking to ensure a tender crumb. Do not over-mix the batter. For a gluten-free version, use a 1:1 gluten-free flour blend. For a vegan version, replace the egg with a flax egg and use melted coconut oil or vegan butter.
