  • 1 liter (4 cups) orange juice, pulp-free preferred
  • 1 liter (4 cups) pineapple juice
  • 2 liters (8 cups) ginger ale (e.g., Canada Dry or Schweppes)
  • 1 quart (4 cups) rainbow sherbet (e.g., Dreyer’s or Tillamook)
  • 1 cup frozen mango chunks or lychee fruit (optional, for ‘eyeballs’)

Instructions

  1. Chill the orange juice, pineapple juice, and ginger ale in the refrigerator for at least 30 minutes before serving.
  2. In a large punch bowl or pitcher, combine the chilled orange juice and pineapple juice. Stir gently.
  3. Slowly pour the ginger ale down the side of the bowl to preserve carbonation. Stir once gently.
  4. Using an ice cream scoop, add large spoonfuls of rainbow sherbet to the punch. Do not stir; let them float.
  5. Optionally, drop in frozen mango chunks or lychee fruit to float on top as ‘eyeballs’.
  6. Serve immediately with a ladle, ensuring each serving gets some melting sherbet.

Notes

For best results, chill all ingredients and the punch bowl before serving. Do not stir the sherbet into the punch; let it melt naturally for creamy swirls. If the punch goes flat, add fresh ginger ale. For a dairy-free version, use coconut-based sherbet or sorbet. To keep punch cold without diluting, freeze orange juice into ice cubes.
