  • 1 cup (200g) granulated sugar
  • ยฝ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • ยผ cup mini chocolate chips (optional, for eyes)
  • Pinch of salt

Instructions

  1. Preheat your oven to 200ยฐF (95ยฐC).
  2. Line a baking sheet with parchment paper.
  3. Clean your mixing bowl and beaters thoroughly with lemon juice or vinegar to remove any grease.
  4. Separate the eggs while cold, transferring whites to the mixing bowl. Let whites come to room temperature (about 30 minutes).
  5. Add cream of tartar and salt to the egg whites. Beat on medium speed until foamy and opaque, about 1-2 minutes.
  6. Gradually add the sugar, one tablespoon at a time, with the mixer running.
  7. Increase speed to high and whip until stiff peaks form, about 5-7 minutes. The mixture should be glossy and smooth.
  8. Add vanilla extract and mix on low just until combined.
  9. Transfer meringue to a piping bag fitted with a ยฝ-inch round tip (or a zip-top bag with the corner snipped).
  10. Pipe ghost shapes onto the prepared baking sheet: pipe a round blob, then pull straight up to create a peak. Space about 1 inch apart.
  11. If using, gently press two mini chocolate chips into each ghost for eyes immediately after piping.
  12. Bake for 60-75 minutes, until firm to the touch and easily lifting off the parchment.
  13. Turn off the oven and let ghosts cool inside with the door slightly ajar for at least 1 hour.
  14. Remove from oven and let cool completely on the baking sheet before storing.

Notes

Do not make on a humid day. Ensure bowl and beaters are completely grease-free. Do not over-whip egg whites. Let ghosts cool completely before storing in an airtight container at room temperature for up to two weeks. For longer storage, freeze for up to three months.
