Homemade Pumpkin Spice Syrup: Easy 5-Minute Recipe

This homemade pumpkin spice syrup takes just 5 minutes to make and uses simple pantry ingredients. It turns an ordinary cup of coffee into a warm, cozy treat that tastes like it came from a fancy café.

Ingredients

  • 1 cup (240 ml) water
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) packed brown sugar
  • 1/4 cup (60 g) pumpkin puree (100% pure, not pie filling)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • A tiny pinch of salt (about 1/8 teaspoon)

Instructions

  1. In a small saucepan, combine 1 cup water, 1 cup granulated sugar, and 1/2 cup packed brown sugar. Place over medium heat.
  2. Whisk gently but constantly until the sugars fully dissolve, about 2-3 minutes. The liquid will go from cloudy to clear.
  3. Add 1/4 cup pumpkin puree, 2 teaspoons pumpkin pie spice, and a tiny pinch of salt. Whisk vigorously to break up the pumpkin puree.
  4. Bring the mixture to a gentle simmer (small bubbles breaking the surface). Let it simmer for 2 minutes, whisking occasionally.
  5. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Optional but recommended: Place a fine-mesh strainer over a glass jar or bottle. Pour the hot syrup through the strainer to remove any lumps.
  7. Let the syrup cool completely in the jar on the counter. It will thicken slightly as it cools. Once cool, screw the lid on tight and refrigerate.

Notes

The syrup will keep in the refrigerator for up to 2 weeks. The flavor actually improves after a day or two. If the syrup thickens too much when cold, microwave the jar for 10-15 seconds or place it in a bowl of warm water. For a sugar-free version, substitute with 1:1 granulated monk fruit sweetener and brown sugar substitute.
