Healthy Zucchini Fritters Recipe Easy Homemade with Garlic Greek Yogurt Sauce

  • 3 medium zucchinis (about 1.1 lbs), shredded and squeezed dry
  • 2 large eggs, room temperature
  • ½ cup (60g) all-purpose flour or whole wheat flour (almond flour for gluten-free)
  • ¼ cup (25g) finely grated Parmesan cheese
  • 2 cloves garlic, minced (for sauce)
  • ½ cup (120g) plain Greek yogurt, full-fat or low-fat
  • 2 tbsp chopped fresh dill or parsley
  • Salt and black pepper to taste
  • Olive oil for frying
  • For the sauce:
  • ½ cup (120g) Greek yogurt
  • 1 garlic clove, minced
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Shred 3 medium zucchinis using a box grater or food processor (about 1.1 lbs). Place shredded zucchini in a clean kitchen towel or paper towels and squeeze firmly to remove as much moisture as possible (about 5 minutes).
  2. In a large bowl, whisk 2 large eggs until combined. Add ½ cup flour, ¼ cup grated Parmesan, 2 tbsp chopped fresh dill or parsley, and salt and pepper to taste. Stir to combine.
  3. Add the squeezed zucchini to the bowl and mix well. The mixture should hold together when pressed. If too wet, add more flour, one tablespoon at a time (2–3 minutes).
  4. In a small bowl, combine ½ cup Greek yogurt, 1 minced garlic clove, 1 tbsp lemon juice, and salt and pepper to taste. Mix and refrigerate until ready to serve (5 minutes).
  5. Heat 2 tablespoons olive oil in a non-stick or cast iron skillet over medium heat until shimmering but not smoking.
  6. Scoop about 2 tablespoons of zucchini batter per fritter and gently flatten into rounds in the pan. Cook for 3–4 minutes on each side until golden brown and crispy. Avoid overcrowding; cook in batches if needed (8–10 minutes total).
  7. Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
  8. Serve warm with garlic Greek yogurt sauce spooned on top or on the side for dipping.

Notes

Squeeze zucchini thoroughly to avoid soggy fritters. Use moderate heat to prevent burning outside while keeping inside raw. If batter is too wet, add more flour. For crispier fritters, use a cast iron skillet. Leftovers can be reheated in oven or skillet to maintain crispiness.
