  • 1 teaspoon dried parsley (or 1 tablespoon fresh, finely chopped)
  • ½ teaspoon dried dill weed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon lemon juice (freshly squeezed)
  • Salt and black pepper to taste
  • 1 medium carrot, peeled and cut into sticks
  • ½ red bell pepper, sliced into strips
  • ½ cucumber, sliced into rounds or sticks
  • ½ cup purple cabbage, shredded
  • Optional: cherry tomatoes or snap peas for extra variety

Instructions

  1. In a medium mixing bowl, combine 1 cup of plain Greek yogurt with dried parsley, dill weed, garlic powder, onion powder, and lemon juice. Stir well to blend all the flavors. If the dip feels too thick, add a teaspoon of water or milk to reach desired consistency.
  2. Add a pinch of salt and black pepper, then taste and adjust seasoning as needed. Let the dip sit for 5–10 minutes to let the flavors meld. Store in the fridge if making ahead.
  3. Thoroughly rinse all veggies under cold water. Peel the carrot and cut it into sticks about 3 inches long and ½ inch thick. Slice the red bell pepper into strips, removing seeds and membranes.
  4. Peel the cucumber if desired, then cut into rounds or sticks.
  5. Thinly slice or shred the purple cabbage.
  6. Arrange the rainbow veggies neatly in one or two compartments of a lunchbox.
  7. Place the Greek yogurt ranch dip in a small airtight container or jar to avoid spills.
  8. Optionally, toss in a few cherry tomatoes or snap peas for more color and texture variety.
  9. Close the lunchbox securely and store it in the fridge until ready to go.

Notes

Use thick Greek yogurt for best dip consistency. Fresh herbs brighten flavor but dried herbs work fine. Keep dip separate from veggies to avoid sogginess.
