  • 1/2 cup (120 g) plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and pepper, to taste
  • Whole wheat burger buns or lettuce wraps
  • Fresh tomato slices
  • Leafy greens or baby spinach
  • Pickles or red onion slices (optional)

Instructions

  1. In a large bowl, combine 1 lb lean ground turkey with chopped onion, minced garlic, parsley, smoked paprika, cumin, salt, and pepper. Add beaten egg and breadcrumbs if using. Mix gently until just combined.
  2. Divide mixture into 4 equal portions and shape each into a patty about 3/4 inch thick. Make a shallow indentation in the center of each patty with your thumb.
  3. Preheat a non-stick skillet or grill pan over medium-high heat. Add a teaspoon of olive oil or cooking spray.
  4. Cook patties for 5-6 minutes on the first side until browned and crispy. Flip and cook another 5 minutes until internal temperature reaches 165°F (74°C). Avoid pressing down on patties.
  5. While burgers cook, whisk together Greek yogurt, lemon juice, dill, Dijon mustard, minced garlic, salt, and pepper in a small bowl. Adjust seasoning and chill until serving.
  6. Toast buns lightly if desired. Assemble burgers with turkey patty, tomato slices, leafy greens, and a dollop of Greek yogurt sauce. Add pickles or red onion if desired.
  7. Serve immediately with your choice of sides.
