A quick and easy green smoothie packed with protein and fiber, perfect for weight loss support and sustained energy. Creamy, refreshing, and delicious with a subtle zing of ginger.

Ingredients

  • 1 cup fresh spinach leaves (packed)
  • 1/2 cup cucumber, peeled and chopped
  • 1 small ripe banana, peeled
  • 1/2 cup frozen pineapple chunks
  • 1/2 cup low-fat cottage cheese
  • 1 scoop unflavored or vanilla plant-based protein powder (pea or hemp)
  • 1 tablespoon almond butter
  • 1 teaspoon freshly grated ginger
  • Juice of half a lemon
  • 1 cup unsweetened almond milk
  • Optional: 1 teaspoon chia seeds
  • Optional: 1-2 teaspoons raw honey or maple syrup

Instructions

  1. Rinse spinach thoroughly and chop roughly if your blender isn’t powerful. Peel and slice banana, peel cucumber, and measure out pineapple chunks. Grate fresh ginger using a microplane or fine grater.
  2. Add spinach, cucumber, banana, pineapple, and almond milk to the blender. Starting with the liquids helps everything blend smoothly without jamming the blades.
  3. Scoop in cottage cheese, protein powder, almond butter, grated ginger, and lemon juice. If using chia seeds or sweetener, add them now.
  4. Blend on high speed for 1-2 minutes. Stop once or twice to scrape down sides with a spatula for even mixing. The smoothie should be creamy with no visible chunks.
  5. Taste and adjust sweetness or consistency. Add honey or maple syrup if desired, or a splash more almond milk for thinner texture and blend briefly again.
  6. Pour into a tall glass and serve immediately. Optionally garnish with chia seeds or a small mint leaf.

Notes

For a cooler smoothie, freeze banana slices or add ice cubes. If the smoothie is too thick, add more almond milk. Substitute cottage cheese with silken tofu or extra protein powder for dairy-free or vegan options. Fresh ginger adds a subtle zing; ground ginger powder can be used if fresh is unavailable. Blend until smooth but avoid overheating the mixture.
