Ingredients

Scale
  • 1 ½ cups (135 g) old-fashioned rolled oats
  • ½ cup (125 g) almond butter
  • ½ cup (90 g) dark chocolate chips (70% cocoa or higher)
  • ¼ cup (85 g) honey (or maple syrup for vegan version)
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt, plus extra for sprinkling
  • 2 tablespoons chia seeds (optional)
  • ¼ cup (30 g) protein powder (vanilla or chocolate flavored)
  • ¼ teaspoon cinnamon

Instructions

  1. Combine dry ingredients: In a large mixing bowl, add rolled oats, protein powder, chia seeds (if using), cinnamon, and sea salt. Stir until evenly mixed.
  2. Mix wet ingredients: In a separate small bowl, whisk together almond butter, honey, and vanilla extract until smooth. Microwave almond butter for 15 seconds if too thick.
  3. Combine wet and dry: Pour wet mixture into dry ingredients and fold together until a sticky dough forms. If too dry, add 1 teaspoon of water or almond milk at a time until it holds together.
  4. Fold in chocolate chips gently, keeping chunks intact.
  5. Form balls: Scoop out portions using a tablespoon or hands and roll into 1-inch (2.5 cm) balls. Place on a lined baking sheet or plate.
  6. Sprinkle a tiny pinch of sea salt on top of each ball.
  7. Chill: Refrigerate for at least 30 minutes to set.
  8. Store: Keep in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

If mixture is too sticky when rolling, wet your hands slightly or dust with oats. Do not skip chilling as it helps the balls firm up and improves texture. Use high-quality dark chocolate for best flavor. For vegan version, substitute honey with maple syrup and use plant-based protein powder.
