  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup solid coconut oil
  • 2 tablespoons maple syrup
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the lower rack to catch any drips.
  2. In a medium bowl, combine the sliced apples, cranberries, 3 tablespoons maple syrup, lemon juice, cornstarch, cinnamon, and vanilla extract. Toss until the fruit is evenly coated. Let it sit for 5 minutes.
  3. In a separate small bowl, mix the rolled oats, almond flour, and salt. Add the solid coconut oil and 2 tablespoons maple syrup. Use your fingers or a fork to work the oil into the dry ingredients until crumbly. Stir in the nuts if using.
  4. Pour the fruit filling into a greased 8×8 or 9×9 baking dish. Sprinkle the oat streusel evenly over the top. Do not press it down.
  5. Bake for 30 to 35 minutes, until the filling is bubbling and the streusel is golden brown. If the topping browns too quickly, tent loosely with foil after 20 minutes.
  6. Let the crisp rest for 10 minutes before serving to allow the filling to set.

Notes

For best results, use firm apples like Honeycrisp or Fuji. Rolled oats are essential for a crunchy topping; do not use quick oats. If using frozen cranberries, do not thaw them first. The crisp can be assembled up to 24 hours in advance and stored covered in the fridge; add 5-10 minutes to the baking time. Leftovers keep in the refrigerator for up to 4 days.
