  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

Instructions

  1. Wash and dry 2 large apples thoroughly. Cut into thin, even slices about 1/4-inch thick, keeping the skin on for extra fiber and texture. Toss slices gently in 1 teaspoon lemon juice to prevent browning.
  2. In a small bowl, combine 1/4 cup peanut butter, 1 tablespoon honey, and 1/2 teaspoon ground cinnamon. Warm peanut butter slightly in microwave for 10-15 seconds if too thick, then stir until smooth.
  3. Arrange apple slices evenly on a serving plate, overlapping slightly to create a ‘nacho’ effect.
  4. Drizzle the peanut butter mixture over the apples in thin streams using a spoon.
  5. Sprinkle 1/3 cup granola evenly over the apples, followed by 1 teaspoon chia seeds or flaxseeds if using.
  6. Optionally, dust a tiny pinch of cinnamon over everything or add fresh mint leaves for garnish.
  7. Serve immediately for best texture. If preparing ahead, keep drizzle and granola separate until serving.

Notes

Warm peanut butter slightly to make drizzling easier. Use lemon juice to prevent apple slices from browning. Store components separately to maintain freshness. For nut-free version, substitute peanut butter with sunflower seed butter and use nut-free granola. Can add Greek yogurt to drizzle for extra protein. Thin apple slices provide best texture.
